Cinnamon Raisin Bananas Foster French Toast

Ingredients:

French toast *Loaf of Chunky Cinnamon Raisin Jenny Lee Swirl Bread (or Chunky Cinnamon) *Butter for frying (about 6 tablespoons) *1 1/2 cups half & half (or milk substitute) *4 large eggs *2 tablespoons granulated sugar *1 teaspoon cinnamon *1 teaspoon vanilla

Bananas foster topping: *6 tablespoons butter *1/2 cup packed brown sugar *1/4 cup maple syrup *1/4 cup dark rum (or 1 tsp rum extract) *2 firm bananas, peeled and sliced Instructions: 1. Preheat oven to 300° 2. In a shallow dish, whisk together the eggs, sugar, half & half, cinnamon & vanilla. 3. Preheat a skillet or griddle over medium-low heat. 4. Dip the bread into the custard & let it soak for 5 minutes, turning once to coat both sides. 5. Heat 1 tablespoon of butter into the skillet or griddle. Add the soaked bread & cook for 2 to 3 minutes per side, or until lightly golden. 6. Remove the French toast from the skillet & place on a baking sheet in the oven to keep warm. Add more butter to the pan as needed & repeat with the remaining bread. 7. Heat the 6 tablespoons of butter in a sauté pan over medium-high heat. Whisk in the brown sugar & maple syrup & cook for about 5 minutes or until all the sugar has melted & thickened slightly. Add the banana slices & cook for about a minute. Remove the pan from the heat & add the rum. Return the pan to the heat & cook for about 3-4 minutes. 8. To serve, cut the French toast in half diagonally and place on a plate. Pour the bananas foster mixture on top & enjoy!
