Roasted Apple & Brie Cinnamon Raisin Toast

Ingredients:
1 medium apple, cored & cut into 1/4-inch thick slices
6 slices cinnamon-raisin Jenny Lee Swirl Bread
4 ounces sliced Brie cheese (rind on)
1/2 cup toasted pecans, chopped
6 tablespoons honey
Instructions:
1. Preheat oven to 350° bake the pecans on a baking sheet for 7 to 8 minutes, until golden & fragrant. Chop & set aside.
2. Turn the oven up to 400° & coat your baking sheet with nonstick cooking spray.
3. Arrange the apples on the baking sheet & roast in the oven until the apples are soft & golden brown, about 15 minutes.
4. Toast bread to your taste.
5. Top each slice of bread with 3 slices of Brie, 3 slices of roasted apples, a sprinkle of chopped pecans & a drizzle of honey.
Pro tip- if you prefer your cheese to be more melted, simply put the toast back on the cookie sheet & bake for a few minutes.
