BBQ Jackfruit Pizza

Skinny Pizza Dough Ingredients:
1/2 - 3/4 cup water
1 teaspoon yeast
1/2 teaspoon salt
1/2 cup plain Greek yogurt
2 cups self-rising flour
Pizza Ingredients:
Bottle of your favorite BBQ sauce
One can of Trader Joe's Jackfruit
Mozzarella Cheese
Thinly sliced red onion
Pineapple
Jalapeño
Cilantro
Instructions:
1. Heat oven to 425.
2. In a bowl, mix the flour, salt, yeast & yogurt together until it starts to combine. Add up to 3/4 cup of water until combined. Start with 1/2 a cup & see how much of the flour is being incorporated. If there is still a bit of loose flour in the bowl, add a couple tablespoons of water at a time, until it forms a ball that you can roll out and knead on parchment paper
3. Let rise for at least 30 min.
4. Drain & rinse jackfruit & break apart pieces by hand until shredded.
5. Heat 1 tablespoon of olive oil in a skillet over medium heat & once hot, add in the jackfruit. Cook for about 5 minutes to heat through, stirring often.
6. Add half a jar of BBQ sauce cover & simmer on low for 15 minutes.
7. Sprinkle a couple of spoons of flour on a sheet of parchment paper to roll out the dough.
8. Dock the dough so you don’t get any big dough bubbles on the pizza.
9. Top with the remaining 1/2 jar of BBQ sauce, shredded mozzarella, pulled bbq jackfruit, red onion, pineapple & jalapeño.
10. Transfer the parchment paper to a cookie sheet & bake in the oven for 13-15 minutes or until crust is golden brown & cheese is melted.
11. Top with fresh cilantro & serve immediately.
