Za’atar Roasted Cauliflower with Yogurt Tahini Sauce

Ingredients:
For the za’atar and roasted cauliflower
1 head cauliflower (approx. 2 pounds), cut into small florets
4 Tablespoons olive oil
2 garlic cloves, minced
1/4 cup almonds or pine nuts
2 teaspoons Za'atar spice
1/4 teaspoon salt
1/8 teaspoon pepper
Fresh parsley for garnish
For the tahini yogurt sauce
1/2 cup plain yogurt
2 teaspoons tahini (I used @traderjoes)
1 teaspoon lemon juice
Dash of salt and pepper
Instructions:
1. Preheat over to 400 degrees F.
2. In a large mixing bowl break the cauliflower into small florets & set aside.
3. In a small mixing bowl combine the olive oil, garlic, Za'atar, salt, pepper & whisk together.
4. Pour the olive oil mixture over the cauliflower & use tongs to stir until all of the cauliflower is coated.
5. Spread the cauliflower on a baking sheet & roast in the oven for 30-35 minutes stirring occasionally or until the cauliflower is tender.
6. While the cauliflower is cooking, heat a small pan on medium heat. Toast the almonds or pine nuts in a dry pan for 1-2 minutes set aside.
7. In a small mixing bowl whisk together the yogurt, tahini, lemon juice, salt & pepper.
8. Remove the cauliflower the oven and garnish with the toasted nuts, fresh chopped parsley & drizzle the yogurt tahini sauce on top.
